Theodoros Polykarpou, the founder of the company, was born and raised in Limassol, Cyprus. With a background in Chemistry, he gained experience in a laboratory setting, however he soon realised that he was better suited to the open air and the freedom that it brings. With his uncle Anaxagoras’ persuasion and support, his humble beekeeping hobby transitioned to a professional pursuit. His partner, Loria, followed a similar professional path and not before long they joined forces. SPONDI's mission is clear- to provide exceptional honey and derivative products in the purest, most natural ways possible. It's a commitment to nurture a robust and thriving bee community. My honey is thickening and crystallizing, what does it mean?

Did you know that honey crystallization is a completely natural process? Over time, honey may change from its liquid state to a crystallized, creamy texture. This transformation occurs when glucose molecules align, creating the delightful granular consistency loved by many. Embrace the authenticity of pure honey as it crystallizes – a testament to its unprocessed, genuine nature.

How does honey acquire its various flavors?

Honey does not inherently possess flavors; we refrain from adding preservatives to imbue it with specific characteristics. Instead, we collect our honey from distinct flower sources. This means that during the foraging season, the bees primarily gather nectar from particular flowers. For instance, towards the end of summer, we harvest thyme honey, indicating that thyme is the predominant flowering plant during that season. Similarly, we produce honey from wild lavender, rosemary, and citrus blossoms.

Where are your beehives located?

We engage in nomadic beekeeping, which involves relocating our beehives according to the flowering seasons, for honey collection. There exists an informal agreement allowing beekeepers to position their beehives in various locations. These lands may be privately owned, belong to acquaintances or strangers, or be remote areas. Occasionally, individuals even extend invitations for us to assist in pollinating their trees or plants, thereby accelerating their growth with the aid of bees.
